Spur of the moment

I was sitting in a meeting the other day and an idea came to me. "Griff and I should go to St. George. Today." I called him after my meeting and convinced him that it would be fun to pack up the car, leave late after we both got off work and spend the day in St. George. Aaannnddd we did. It was rough getting there as we didn't arrive until 3:30 am, but we crashed at my cousins house and slept fairly well on the couches.

The next morning we woke up and started our busy day. With a cooler full of food we started off the day by hiking around Dixie rock with Brian and his friend. When we were finished there, Griff and I headed out to Sand Hallow. It wasn't even noon and we were already dying of heat. We jumped off the rocks, swam around for a bit then headed over to a beachy area. We sat in the mud in the water that felt perfect, built a mud castle and sat and soaked up the sun for hours. It was truly a delightful afternoon. We ate pb&j's for lunch with our fruit by the foots, and kool aid, played some more and decided to head back to shower and get ready for the day.

After we got ready we went and ate dinner at the best restaurant EVER. It's called Anasazi Steak House.  And it may be the best food I've ever eaten. Next time you're in St. George, you must go. We splurged and ate all three courses. We had cheese fondue for our appetizer and I had a pork chop while Griffin had a steak. What's so cool about this place is that your meat comes our raw on a stone that is over 700 degrees. As you cut it into bit size pieces, it cooks to perfection. We might have died. By the end of our meal I was stuffed but magically made room for chocolate fondue. I don't know if I've eaten so much, but been so happy to be so full! The only thing we could handle after such an amazing meal was a movie and luckily our meal came with free movie tickets!

After our movie we rode go karts at fiesta fun and then headed to Nelson's to have ice cream with my old room mate Olivia. It was really such a wonderful day. We woke up early the next morning and pulled into Griffin's work right at 2:00 when his shift started. What a fun, spur of the moment trip.

The big apple and kissing goodnight

I'm really not good at this whole blogging thing am I?

Well I went to New York last week for the National Conference on Race and Ethnicity with two other students and teachers from Salt Lake Community College. I'm involved in Student Life and Leadership at SLCC and two weeks ago I got a phone call. The guy that was supposed to go couldn't make it for some reason and they had an open spot. I was asked if I wanted to go to New York for a week. Um of course!!

I made a few phone calls and  I was luckily able to get work off and a week later I was on a plane. While I was there, I learned lot in the classes I attended and from the people that I talked to. I really felt like it helped me to broaden my horizons and open my mind to new ideas. We also were able to see a lot of sights as we ran through the subway and walked really fast all over the city. A few times I'm seriously surprised I didn't get hit by a taxi. We stayed right in Times Square, saw  the Voca People who pulled Aaron up on stage and had us laughing the whole time (check them out!), went to Central Park, the Empire State Building, Fifth Avenue. the Statue of Liberty, Staten Island, Ground Zero, China Town, a Mets game, and a did a fair amount of shopping. I had a wonderful time getting to know the people from SLCC, but when Saturday rolled around, it was nice to be on a plane back home. I missed my family and Griffin. When my family pulled up to the curb to get me from the airport, Griffin hopped out of the car. I didn't know he was coming with them and I was thrilled! We then spent the rest of the night together making pina coladas, watching How I Met Your Mother and talked for hours.Which leads me to my next topic.....

Our awesome Avengers t-shirts

I hate kissing good night. I really do. Yesterday Griffin and I practically spend the entire day together because of some miracle we both had work off. We had Cafe Rio, went to the Living Planet Aquarium, spent hours wandering in and out of stores holding hands like two kids in love, sat in Barnes and Noble on the floor poured over books for a good hour and a half, saw Avengers for the third time, picked up his car from the shop, talked with his sister and then just cuddled forever. It was seriously a wonderful day. And when I couldn't keep my eyes open any more, it was time to drive home. We kissed good night and I hated leaving, like I always do. Its stupid really, because I know perfectly well that "one more kiss" isn't ever really going to be enough. I also know that I'll probably see him the next day and if heaven forbid not that day, the day after that! So what I don't understand is this: why is saying good night so hard to do every night? I guess that's part of being in love :) We've been together for about three months and honestly, it feel like so much longer. We're still having a delightful time getting to know each other.  Have I mentioned that I kinda love him?
